Girl Meets Dirt - Orcas Pear With Bay Spoon Preserves
At the height of ripeness these local delicacies (discovered growing wild on Orcas in the 1970s) cook beautifully into a rosy preserve, with notes of ginger from their fresh kitchen garden grown bay leaves.
A sweet little treasure of Orcas' agricultural history, these pears are the perfect example of a 'roadside' tree adapting itself perfectly to the island climate. Girl Meets Dirt is proud to be stewards of this delicious pear's future.
Highly versatile, this preserve is a gorgeous topping to panna cotta and cheesecake, and adds a sweet, lightly herbal note to cheese pairings. You'll adore it with soft-ripened Goat cheese or slathered between a wedge of brie, wrapped in puff pastry, and baked. But don’t be afraid to get crazy and deglaze a pork chop with it too.
