Jeremy Weller always liked his food full of flavor and heat. In fact, it is rumored that when Jeremy was just 8 years old, a piece of white bread was the vessel for his first love, Tabasco Sauce. Ever since Liz (his wife) met him some 20 years ago, hot sauce has been a necessary staple in their home. Frustrated with the lack of true habanero sauces on the market, Jeremy began developing his own sauce. His sauce would have to be something that was not mixed with a considerable amount of added ingredients, he felt took away from the pure, fruity habanero flavor. And he would intentionally avoid garlic, pineapple, mango, etc. For these flavors actually detract from the delicate complexity of the habanero pepper. Over the years, Jeremy produced and tested hundreds of gallons of sauce. It took nearly 10 years of development and tasting to find the desired sauce flavor profile: approachable for most—heat wise and had to also showcase true habanero flavor.
Due to all the sauce blends in the market, they discovered that most people were not even familiar with what a habanero truly tasted like and were shocked to understand the peppers’ subtle complexities. What began as a hobby developing sauce in their home kitchen quickly turned into a part time job as friends and family both started demanding the presence of the sauce at all get-togethers and in 2018 Weller Sauce Works (the family passion project) officially launched.
At first it was Jeremey running all aspects of the business and then it became a friends and family affair. From their daughter’s hand labelling some of the sauce, to chosen family members complying with the forced and very frequent taste testing going back over a decade. A few years ago, as they outgrew the home kitchen, Liz joined to help manage the business and the marketing side of things. With their cooking headquarters now in a commissary kitchen in Beacon Hill and increased batch quantities, they brought Erin Dye on board with a shared ownership and as Director of Sales.
Recently, one of their friends who runs a restaurant in Spokane wanted to put their sauce tabletop. They donated a case of Weller Sauce to her business, and that is how their sauce began to get some public buzz. A journalist for the Inlander newspaper had the occasion to taste Weller Sauce there and wrote up their first press publication, giving them the title of "Best Habanero Hot Sauce of 2023".
You’ll want to try this sauce on EVERYTHING!! Any breakfast item (eggs, potatoes, cream cheese toast...any breakfast protein.) Obviously, any Mexican food is a match made in heaven. Pasta sauce, Pizza, Sandwiches. This sauce can also be used as the base of any other sauce to make delicious dips. Add to Greek yogurt or mayonnaise or sour cream to zip up any dish.
