Firefly Kitchens, a Seattle-based company, was founded in 2010 by Julie O’Brien when she discovered the health benefits and amazing flavor of wild-fermented foods while studying nutritional therapy and helping her dad through a battle with colon cancer. Firefly Kitchens specializes in nutrient-dense, probiotic-rich foods, including all kinds of sauerkrauts and fermented carrots. Julie believes that sharing these traditionally fermented foods and how easy it is to make them a part of everyday life is the best way to make a contribution to the health of her family, friends and larger community. Julie's combined love of using food as medicine and creating fermented foods led to the creation of her popular cookbook, "Fresh & Fermented". Firefly has won 5 Good Food Awards over the years and continues their tradition of making high quality fermented veggies inspired by the gut-healing bacteria within.
